HOW TO: Pack A Healthy Lunch for Under $1

Yesterday morning I had very few options in the refrigerator to pack my lunch for work.  I typically bring a portion of leftovers and assemble it the night before as I am putting away dishes from dinner.   So without having any leftovers I ended up bringing hard boiled eggs and spinach.  While eating lunch I could not help but think this had to be one of the simplest, cheapest, and healthy lunches I have packed in some time.  Here is the breakdown for the packed lunch including health info and approximate cost:

Hard boiled eggs, spinach, slice of bread, and lots of water.
(3) Eggs:
240 calories
21g protein
3g carbs
15g fat
$0.30

Serving of Fresh Spinach:
20 calories
2g protein
3g carbs
0g fat
$0.40

(1) Slice Marble Rye Bread:
80 calories
2g protein
15g carbs
1.5g fat
$0.13

Totals: 340 calories, 25g protein, 21g carbs, 16.5g fat, $0.83
